Chlorogenic acid is prepared from dried leaves of Eucommia ulmoides Oliv. with suitable solvents.
properties:
Brown to white powder. Solubility in water at 25¡æ is about 4%, much more soluble in hot water. Alkaline solutions acquire an orange color. Freely soluble in alcohol, acetone. Very slightly soluble in ethyl acetate. Heating with diluted HCl yields caffeic acid. Forms a black compound with iron, said to be responsible for the blackening of cut and cooked potatoes.
